Rosemary & Lemon Roast Chicken.

Take your regular sized fryer chicken, and stuff this stuff inside:
-One lemon cut into pieces
-a bunch of garlic cloves
- a handful of parsley
- a handful of fresh rosemary
- 1/3 or so of a cup of lemon juice

Put the fryer into a roasting pan upside down, brush olive oil on it, grate some lemon rind on it, put some salt and pepper on it, and add a little poultry seasoning if you wish.

Cut up a few carrots, 1/3 of an onion, a couple celery stalks and toss them around the chicken too.

Pour some more lemon juice in the roasting pan, as well as 1/3 a cup of white wine, and stick it in the oven uncovered at 350'F for an hour.

After the hour is up, flip the chicken over and put more olive oil, salt and pepper, etc on it....and stick it back in the oven for appx. one more hour.

Remove, let it cool for 10 minutes.............and devour.

Sounds great Carlo.
For our Super Bowl Party, we fixed Buf wings and BBQ pulled pork sandwiches. The BBQ was delicious.
Barely any left for leftovers.
