Carlo's Chicken Cacciatore
Another easy and painless slow cooker recipe.
-Take a bunch of chicken legs or thighs and brown them in a frying pan. (Don't bother with chicken breasts, legs and/or thighs work better with sort of "peasent food")
-Toss them into a crock pot and add a large can (or couple) of stewing tomatoes, a can of tomato paste, a few cut up carrots, a few cut up celery stalks, and 4 or so cut up raw potatoes.
-Dice up 1/2 onion or so, chop up a whack of garlic, saute it in a pan for a couple minutes and add it in also.
-Add some salt and pepper, chopped up fresh parsley, basil (whatever really)......and some wine, wine is always good.
-Crank the crock pot to high for an hour or so, then turn it to low and leave it for a good 5 or so hours.
-You can adjust the quantities and ingredients to suit your taste or the number of mouths to feed.
-It should end up like a stew, you can serve it over rice (remember to remove the bones first)or just eat it with a loaf of french bread or buns. (I used our new bread maker to whip up a fresh loaf of french bread which went perfectly with the stew)
-Some times I will not add the potatoes, and then you can have pasta with it instead.
-It makes a great cold winter day meal, and takes barely anytime to prepare.
